What does that mean to many? Well, for me being from a Puerto Rican Descent. It means eating, eating, and more eating!

It’s during this time we come out with all the Christmas meals, those that we only make during this time, because it is a special moment to spend with your family.

Christmas Eve menu will consist of:


“Coquito” – Spiced egg nog

“Pernil” – Roasted Pork

“Arroz con Gandules” – Rice with pigeon peas

“Pasteles” – smashed plantains patties with meat and boiled in plantain leaves!!

“Arroz con dulce” – Rice pudding

“Tembleque” – Coconut custard

Did you notice something here? the majority is CARBS!!! oh my Goodness! but how Good it is!!

OKAY… My little trick to assure I enjoy this food is to take some 4LIFE DIGESTIVE ENZYMES! OH YES, I’ll take this 1/2 hour prior to eating and I’m a very happy person! The Enzymes are fantastic in helping me digest the food.  Click on image for more information.

When thinking of my number ONE, I thought of so many people that in different stages of my life were my Number ONE!

As a Child my Dad was my Number ONE, I saw in him a hard working man that took care of his family, helped around the house,  loved to cook and was a great handyman during the weekend.  He taught me, that although in a managerial position, it was okay to roll up your sleeves and work together with your team.

Then, as a Teenager my number one were a couple of  people,  they all had Compassion and Love, they knew when I needed a hug and needed encouragement.  They were my Angels that God sent, while my home was going through turmoil.  Who were they?  my Best Friends Mothers,  Ida Cassale and Marina Carrion.  These women made an impact in my life that after 40 years I still honor them and love them, although they are no longer with us.

As an Adult,  at 54 years of age,  I look at my mother and I can see that throughout the years we didn’t see eye to eye, but that didn’t stop her from loving me or me loving her.  There are times we don’t see the impact in our lives from the person most closest to us.   In retrospect, I can see how my character was formed and how I became a Woman of Faith and Honor,  I’m an Entrepreneur and I love people.  These where characteristics I now can identify in my mother.

In conclusion,  these are just an example of my Number ONES!    There are much more!  Since each journey and each stage of life we are given the privilege to have Special people in our lives!

Now that’s an interesting and Hot topic!    What can I say,  when you forgive you release yourself of any stresses and maybe even hate that will wreak havoc in your health one day or the other.

This year I had to decide to forgive the act of a certain person and continue my life without the stress and the agony of the wrong doing I suffered.    As a single mom I had to learn to make end meet, even without child support, at times.    My daughters are now all adults and my youngest is only 25 years old.  Child Support was always delayed for months and even at one time over a few years.  I never did anything to fight for the money,  since my X-husband had told me he knew he had to pay and that he would.   Well,  this year I received a letter from the courts stating that he (Mr. X)  did not owe me any money and that he wanted child support to close the case.    At first I was outraged!   I responded to the judge with all my proof and waited for a response.   Since the courts in Puerto Rico are not the same as those here in the United States,  they wanted my daughters to file a contempt and they themselves, needed to ask for the back child support.   That was not going to happen,  I was not going to put my girls in this problem.  Well, the Case was closed in favor of Mr. X.

At first, I cried for the injustice committed and  I was so angry at myself for trusting his word.   But then, I searched myself and realized,  is it worth it?  Why am I going to hold a grudge?  That won’t pay my bills or buy me something,  but it will steal more from myself and that would be my Peace.    I had to meet him at my daughter graduation from the Police academy.  I breathed and forgave.  When I arrived at the ceremony,  I looked at him, smiled and saluted him as if nothing had ever happened!!

I’m good!  I’m in Peace !!    I’m FREE!!

I forgive for myself!  My Peace!
